German Potatoe Soup

Ingredients:
  • peeled and diced potatoes (enough for your family) 
  • about 1/2 of medium onion ~ diced
  • about 2 cups of water
  • about 1/2 small bag of carrots peeled and diced
  • 1 tsp salt
  • 1 tsp garlic either minced or powdered

Later add
  • about 3/4 package of hot dogs diced
Directions:

Place first set of ingredients into a pan or crockpot and cook on low. When potatoes and carrots are soft thicken the water and then add hot dogs. When the hot dogs are cooked you will be ready to eat.

Pumpkin Granola
 
I wanted to start our week out on the right foot this morning and decided a wonderful, wholesome, and healthy snack would be a great way to do this.
 
If you are looking for a way to make your house smell good and to warm it up by using your oven as well, then you need to try this easy recipe.
 
Give her of the fruit of her hands; and let her own works praise her in the gates.  Proverbs 31:31 (KJV)

 

Ingredients (all ingredients are estimated as you can't go wrong by this recipe)
 
Preheat oven to 300 degrees
 
1/3 c butter (or replace with coconut oil)
1 c pumpkin
1/4 c honey
1/8 c quiona with flaxseed cereal (optional)
3 Tbsp flaxseed
2 Tbsp chai seeds
3 tsp cinnamon
2 tsp nutmeg
2 tsp ginger
4 1/2 c oatmeal
 
If you have anything else such as nuts, coconut, dried fruit, (anything your family loves) feel free to add to this.  All measurements are based on how much of something you like. This is a totally forgiving recipe.
 
Heat all wet ingredients in sauce pan. Mix well, then begin adding all dry ingredients adding oats last.  When the oats are evenly coated, place on an ungreased cookie sheet and place in oven.  Bake for about 50 minutes.  I added more time on mine because I like my granola drier, but it is all about how your family likes granola.  Remember, this is a forgiving recipe. When cooked take out of oven and let it cool.  Store in an air tight container.
 


The Hidden Secrets of Kale

Ingredients:
Fresh Kale ~ cut up into smaller pieces without stalk
Olive Oil ~ I used pure olive oil
salt ~ to season (I used garlic salt for extra flavor)
popcorn seaon ~ to taste

Directions:
Preheat oven to 350 degrees. Wash the kale and be sure it is dry. Toss kale, olive oil, salt/seasoning in a bowl. Be sure to cover all kale with oil. Place on a lightly grease cookie sheet and put in oven for 12 minutes.
Totally Yummy and healthy snack.

My "Duck" loved it so much that she ate what was in my bowl before it ever made it to the oven. I had to prepare a 3rd batch in order to make another batch of chips. 

Breakfast 
Homemade Granola
Ingredients

1 c butter or margarine
1 c brown sugar
1/2 tsp salt
1 tsp cinnamon
6 c oatmeal (quick oats)
 
Directions
In a large, 4-quart saucepan, melt the butter and the brown sugar together. Stir it up and let it simmer for a few minutes (2-3 minutes). Add the salt and cinnamon, then the oatmeal. Remover pot from heat and still until all the oatmeal is coated. Spread granola onto 2 cookie sheets (with sides) and bake at 375 degrees for 10 mins, until golden brown. Cool granola completely on pan, then break up into pieces and transfer to a container. Add raisins or nuts if desired.


NOTE: I have added almonds, dried blueberries and pomograntes to mine. Seriously yummy!!!!
 
Easy Waffles
 
Ingredients:
 
  • 4 eggs
  • 1 c milk
  • 1 Tbsp baking powder
  • 1/2 tsp salt, optional
  • 2 c flour
  • 1/2 c butter, melted
  • 1 Tbsp sugar
  • 1 tsp vanilla, optional ( I added 2 tsp vanilla as we love vanilla flavoring)
  • 1 c dried pomegrantes (optional and/or any dried fruit you like)
Directions:
 
Combine all ingredients in a blender and process until smooth. Pour onto a seasoned and well heated waffle iron. Bake on medium heat until golden brown and cooked through (usually 3-5 minutes depending on waffle iron. Top with melted butter or jam.
  
Duck's Homemade Pancakes
Ingredients
  •    3 cups- flour
  • 1 tsp- cinnamon
  • 1 cup-oats
  • ½ tsp- nutmeg
  • 1 tbsp- wheat germ (optional)
  • 1/8 tsp- ginger
  • 2 tsp- baking powder
  • 2 tbsp- sugar
  • 1 cup- pumpkin or apple sauce
  • 3 cups- water
Directions
  
Stir all dry ingredients well then add… pumpkin or apple sauce and your water.
Mix together well and add butter to the frying pan and cook until done.
Note
This was Duck's writing assignment that was based off a home economics class this morning. She wrote down the ingredients as we put them in the bowl and had to type up the recipe. They came out wonderful. You can refridgerate the remainder and cook up on another morning as well.

Drinks
Hot Cocoa ~ Indiviual servings

Ingredients
  • 1 tsp baking cocoa
  • 1 tsp sugar (or to taste)
  • creamer (to taste)
  • boiling water
  • top off with favorite flavored liquid creamer for great flavor or just add milk to cool off some.

Crock Pot Rump Roast with potatoes and carrots and Wheat Potatoe - Caraway Bread



 
Rump roast, potatoes, and carrots

Ingredients:

rump roast
sliced potatoes (with or without skins)
carrots
1/4 cut onion
2 tbsp minced garlic
4 beef bullion cubes
salt to your taste

Directions:

Add all the above to your crock pot and simmer on medium for the afternoon. When cooked you can make gravy from the broth and serve.



Bread Machine Wheat Potatoes-Caraway Bread
2-Pound
Ingredients:

1 2/3 c water
2 tbsp butter, softened
2 tbsp ground bran
2 tbsp ground oats
1 tbsp ground flaxseed
2 tbsp what germ
3 tbsp kale
1 tbsp honey
1 tbsp caraway seed
1 1/2 tsp salt
1/3 c potatoe flakes
3 c wheat flour
1 c white flour
1 1/2 tsp bread machine yeast

Directions:

Add all ingredients in this order or in the order your particular machine suggestes.

Select Basic cycle. Use medium or light crust. When complete remove from bread pan and cool.

Duck's Favorite Shepard's Pie Recipe
 


Shepard's Pie

Ingredients:

  • potatoes ~ diced up into smaller chunks for mashing (enough for your family)
    • you can leave the skins on or peel them
  • onion ~ enough for taste
  • green onion ~ used one stalk
  • dash ~ salt
  • dash ~ pepper
  • 1 lb ~ ground turkey
  • bag ~ frozen corn
  • optional ~ beef gravy
Directions:

Mashed Potatoes: Boil potatoes until soft. Drain potatoes and add about 2 tbsp butter and enough milk to make the potatoes stick. Add salt and mix well.


Meat: In a frying pan saute' the onions and green onions. Then add ground turkey and cook until done. (I use a cast iron frying pan, but if you don't; add meat to a casserole dish). Add the frozen corn layer and top with the mashed potatoes. I bake in a preheated 375 degree oven for about 30 mins. Your potatoes should have a hint of golden brown to the crust. Serve hot with brown gravy on top (my husbands favorite way).

Gravy: In a sauce pan boil water with 3 to 4 beef bullion cubes, add flour with water mixture to the boiling water until it gets thick. Stir constantly and when thick turn down heat to a simmer. Season with salt to taste.

Easy Baked Ham and Cheesy Macaroni Casserole


Ingredients:

  • Macaroni noodles (enough for your family)
  • Chunked/cubed ham pieces
  • Cheddar cheese sauce
  • Shredded Cheddar cheese
  • Salt
  • Garlic (minced)
  • Bread crumbs (optional)

Note: the above ingredients do not have measurements as you put in what your family likes. This is an easy and forgiving recipe.

Directions:
Preheat oven to 375 degrees. Cook the macaroni noodles until they are done. Add the remaining ingredients to your greased pan. Top with bread crumbs.  Bake for about 30 mins or until done.



Bread Machine Recipes


Multi-grain Potatoe Bread

My own homemade recipe... Hope you enjoy it to.
Ingredients:
1 1/4 c water
2 tsp butter
3 ts sugar
1 tsp salt
1 1/2 tsp parsley
3 tsp flax seeds (ground)
4 tsp potatoe flakes
2 Tbsp powdered milk
2 c bread flour
1 c wheat flour
3 tsp yeast

Directions:
Add ingredients to your bread machine in the order in which your manufactures guide directs you. For me, I add all my liquid and wet ingredients together and then all dry ingredients. Lastly, I add the yeast. Set your machine for the regular/white bread setting and select your crust preferance. Press Start.

Farm House White Bread

Ingredients:
  • 1 c warm milk (just enough to take chill off)
  • 1 egg
  • 2 Tbsp butter
  • 1/2 tsp salt
  • 1 1/2 Tbsp sugar
  • 3 c bread flour
  • 1 1/2 tsp yeast

Directions:
Place all the ingredients into your bread pan in the order of your machine and press start.

Note: super easy recipe!!!


Outrageous Oat Bread

Ingredients:

1 1/4 c water
2 Tbsp oil
1 Tbsp honey
1 1/2 Tbsp dry milk
1/2 t salt
3 c bread flour
1/2 c oats
1 Tbsp yeast

Directions:
Place all the ingredients into your bread pan in the order of your machine and press start.




French Baguettes
This is such an easy bread to make... you can't go wrong.




Ingredients

1 c water
2 1/2 c bread flour
1 tbsp sugar
1 tsp salt
1 1/2 tsp bread machine yeast
1 egg yolk
1 tbsp water

Directions

Measure carefully, placing all ingredients except egg yolk and 1 tsp water in bread machine pan in order of recommended by the manufacturer.

Select dough/manual cycle.

Place dough in greased bowl, turning to coat all sides. Cover and let rise in a warm place about 30 minutes or until double.

Grease cookie sheet. Punch down dough. Roll dough into rectangle on a lightly floured surface. Cut dough crosswise in half. Roll gently back and forth to taper ends.

Place on cookie sheet. Make 1/4 inch deep diagonal slashes across loaves every 2 inches or make one long one down the center of the loaf.

Heat oven to 375 degrees. Mix egg yolk and 1 tbsp water, brush over top of the loaf. Bake 20-25 minutes or until golden brown.





White Bread and/or Hamburger Buns 

Ingredients
 


  • 1 c water
  • 2 tbsp butter
  • 2 tbsp sugar
  • 2 tsp salt
  • 3 c bread flour
  • 3 tbsp dry milk
  • 1 1/2 tsp bread machine yeast
Directions
Place all ingredients in your machine in the order recommended by your machine's manufacturer. Select the Basic cycle and press start.
If making Hamburger or Hotdog Buns follow the remaining directions:
Select the Dough cycle and press start...
When cycle is complete, remove dough from the machine to a lightly floured surface. If  necessary, knead in enough flour to make dough easy to handle. If dough is too elastic, cover and let rest 10 minutes before shaping.
Divide dough into 9 equal pieces. Form each piece into a smooth ball. Place on a large greased baking sheet. Flatten balls into 4-in. rounds (hamburger buns) or 4-in rectagles (for hotdog buns); cover. Let rise in a warm, draft free place until doubled in size, 20 to 30 mins. Lightly beat egg white and 1 tbsp water. Brush on buns. Sprinkle with sesame seeds.
Bake at 375 degrees F for 12 to 15 minutes or until done.
Yields 9 buns...
Traditional Raisin Bread
Ingredients
  • 3 tsp yeast
  • 2 c bread flour
  • 2 tbsp sugar
  • 2/3 tsp salt
  • 3 tbsp butter
  • 1/2 c raisins
  • 3/4 c water
Directions
* Add 1 tsp of cinnamon  - to make it Cinnamon Raisin Bread
Add all the liquid ingredients first then add the dry ones. Choose either regular or light crust and push start.
This recipe may be prepared on a timer and works well. I have had success with this method. There is nothing nicer than to wake up in the morning to the smell of fresh Raisin Bread out of the machine. :)

Pumpkin Yeast Bread

Ingredients
  • 5/8 c warm water
  • 1/2 c pumpkin puree
  • 1/4 c margarine
  • 1/4 c nonfat dry milk powder
  • 1/4 c packed brown sugar
  • 1 tsp ground cinnamon
  • 3/4 tsp ground nutmeg
  • 3/4 tsp salt
  • 1/8 tsp ground ginger
  • 2 3/4 c bread flour
  • 2 1/4 tsp active dry yeast
Directions

Place ingredients in bread machine pan in the order suggested by the manfufacturer. Select basic setting. Start


Light Oat Bread


Ingredients
  • 1 1/4 c water
  • 2 tbsp margarine
  • 1 tsp salt
  • 3 c all-purpose flour or bread flour
  • 1/2 c rolled oats
  • 2 tbsp brown sugar
  • 1 1/2 tsp yeast
Directions

Add ingredients to bread machine pan in order recommended by your machin'es manufacturer. Use regular light setting.

This recipe yields a 1 1/2 pound loaf.

Stars and Stripes Pie

Ingredients:

  • 1 box(es) (15 oz) refrigerated ready-to-use pie crusts
  • 3 can(s) (21 oz each) cherry pie filling
  • 1 can(s) (21 oz) blueberry pie filling
  • 1 large egg, slightly beaten in a cup
  • 3 tablespoon(s) sanding or coarse (crystal) sugar
  • You also need: 1 1/2- to 2-in. star-shaped cookie cutter



Directions:

  1. On lightly floured surface with lightly floured rolling pin, roll 1 pastry round into a 12-in. circle. Fit into a 9-in. pie plate, letting edges overhang. Drain 1 can cherry pie filling, combine in a bowl with remaining 2 cans cherry pie filling.
  2. Bend a clean 6-in. square of cardboard in middle forming a wedge. Place in upper left corner of pie (like hands of a clock pointing to 9 and 12). Fill with blueberry pie filling. Spoon cherry pie filling into rest of pie. Lift out cardboard.
  3. Roll other pastry round into a 10-in. circle. With a pastry wheel or sharp knife, cut round in five 1/2-in.-wide strips. With cookie cutter, cut 5 or 6 stars from rest of pastry. Brush strips and stars with beaten egg;sprinkle with sanding sugar.
  4. Heat oven to 425°F. Starting in middle of pie, carefully place three longstrips, evenly spaced, across filling toward bottom edge. Cut remaining 2 strips into 4-in.-long pieces. Lay over cherry filling on upper right corner.Press ends of strips into edge of crust. Roll overhang of bottom crust up overends of strips to form an even rim. Flute or crimp rim. Brush rim with beaten egg; sprinkle with sugar. Place stars on upper left corner of pie.
  5. Bake 30 minutes. Reduce heat to 350°F; bake 25 to 30 minutes longeruntil pastry is golden brown and filling bubbles. Place on wire rack and cool completely.

Lemon Bread!
This is a very good lemon bread, you can make it as lemony as you like. Great for tea parties or just parties!
Lemon Bread
 2 C. flour
1 t. baking powder
1/2 t. baking soda
1/4 t. salt
1 1/4 C. sugar
1/2 C. soft butter
3 eggs
1/2 C. lemon juice
1/2 C. milk




Heat oven to
350. Stir together flour, baking powder, baking soda & salt. Set
aside. In large mixer beat butter and sugar until fluffy. Add eggs 1 at a time.
Beat well. Gradually beat in lemon juice. Add mix alternatively with dry
ingredients. Stir well. Turn into greased 9x5 loaf pan. Bake 50-55
minutes or until toothpick comes out clean. Remove from oven.  Take a toothpick and dot hole in the top of the bread to get the drizzle inside it if you want. Drizzle with
glaze.

**Clear lemon glaze:
Combine 2 T. sugar with 2 T. lemon juice. Heat until sugar dissolves.l
You can also use a pd. sugar glaze over the top.




Liza's Banana Bread ~ I am not sure who this is. This is a recipe from my hometown old time recipe book. Awesome and easy recipe.... I hope you enjoy!
 
Ingredients:
3 to 4 well ripened bananas
1 c sugar
1/4c butter
1 egg
1 tsp vanilla
2 c flour
1 tsp baking soda
smidge of salt
walnuts, chopped
 
Directions:
Cream together bananas, sugar, egg, butter and vanilla. Sift flour, baking soda and salt together and add to bananas. Sprinkle with walnuts before baking. Makes 1 large loaf. Bake at 325 degrees for 1 hour.


Super Easy Made from Scratch Brownies
Ingredients :
1 c. sugar
3/4 c. flour
1/2 tsp. baking powder
3 heaping Tbsp. cocoa
1 tsp vanilla
2 eggs
1/2 c. oil
1/2 c. chopped nuts


Directions :

Combine all the dry ingredients and stir well. Add the wet ingredients but do not over beat (over beating makes chocolate cake instead of brownies). Spread into a greased square pan. Bake in a 350 degree oven for 20 - 25 minutes.

Holiday Recipes

Impossible Coconut Pie
  • 2 c milk
  • 3/4 c sugar
  • 1/2 c Bisquick Baking Mix
  • 1/4 c margarine or butter
  • 4 eggs
  • 1 1/2 tsp vanilla
  • 1 c flaked coconut
Heat oven to 350 degrees F. Lightly grease pie plate. Place all ingredients in bowl or blender. Cover and blend or use a mixer for 15 seconds. Pour into pie plate.
Bake until golden brown and knife inserted in center comes out clean, 50-55 minutes. Refrigerate any remaining pie.

Note: I use a graham cracker pie crust and put the ingredients into it and follow above recipe.




Mint Chocolate Fudge

Mint Chocolate Fudge
Super Easy Recipe

Ingredients:

1 bag of mint chocolate chips
1 14 oz can of sweetened condensed milk
1/2 tsp vanilla

Directions:

In a medium sized pan on medium heat add the condensed milk and let it get warm. Add mint chocolate chips and stir continuously. You don't want it to stick on the bottom. When chips are almost melted add vanilla and stir. Once everything is mixed well and melted add to a lined 9 x 9 pan and refrigerate until hardened.

Note:

I have found this recipe only works on nice sunny days. It will not harden if it is raining or is humid. Also this recipe can be tweaked to your family likes. I have made many substitutions for many variations of this fudge. It is the only one I use. 

Soft Sugar Cookies

This is a great cookie to frost and decorate for any holiday year round or to add decorative sugar to for a great soft Christmas cookie.
I bake atleast 5 batches of these cookies in a Christmas season.

Ingredients:

1 c sugar
1/2 c melted shortening
1/2 c sour milk ( add 1 tsp vinegar to the 1/2 c milk) let this set while you continue on with the ingredients
1 tsp baking soda (added to sour milk above)
1 tsp salt
1 tsp vanilla
1 egg
approximately 3 c flour

Directions:

Preheat oven to 400 degrees and bake for 7-10 minutes.
Combine sugar, shortening and egg. Mix sour milk and baking soda if you haven't already done so above. Add to sugar mixture. Stir in salt, vanilla and enough flour to form a stiff dough. Roll on flour surface. Cut with cutters and decorate.

This is a great activity/recipe to use with kids of all ages. I used this recipe for the cookies we made for the fall cookies you will see under our field trip activity for Halloween.

Holiday Recipe Fruit Salad ~ My Mom's

Mom's Fruit Salad

Ingredients:

1 can of mixed fruit or tropical fruit
1 can of pinapple
1 sliced banana
1 jar of cherries (optional)
3/4 bag of marshmallows
1/2 bag of coconut
1 tub of whip cream

Directions:

Drain all fruit from cans, add remaining ingredients, chill and serve.
I grew up with this one and LOVED it!!! Another super easy recipe.

Ms Neighbor's Fruit Salad

Ingredients:

1 can mix fruit or tropical fruit
1 can pinapple
2 8oz block of cream cheese
1 tub of whip cream

Directions:

Drain cans of fruit, mix in soft cream cheese and whip cream. Mix together, refridgerate and serve.

Yes, it really is this easy and oh so YUMMY!!!
