What is for Supper?
What are you having for supper?
My plans are homemade scalloped potatoes, ham, green beans, french bread and if there is enough of me left in today, desert might be apple pie.
Recipe to follow on scalloped potatoes. The verdict is still out on it this method will fly by my family. I made it a whole lot different. If they like it I will post it as well as pictures.
French Bread Recipe
Ingredients:
1 c water
2 1/2 bread flour
1 tbsp sugar
1 tsp salt
1 1/2 tsp bread machine yeast

1 egg yolk
1 tbsp water
Directions:
Place all your ingredients in your bread machine in the order recommended by your manufacture.
Select ~ Dough/Manual Cycle
Place dough in a greased bowl, turning to coat all sides. Cover and let rise in a warm place for about 30 minutes or until doubled.
Grease cookie sheet. Punch dough down. Roll into rectangle on a lightly floured surface. Cut dough crosswise in half. Roll up each half of the dough tightly, beginning at 12-inch side. Roll gently back and forth to taper ends.
Place 3 inches apart on cookie sheet. Make 1/4 inch deep diagonal slashes across the top of the loaves.
Cover and let rise in warm place about 30 - 40 mins or until doubled.
Heat oven to 375 degrees. Mix egg yolk and 1 tbsp water; brush over tops of the loaves. Bake 20 - 25 minutes or until golden brown.
Apple Pie
Ingredients:
Approximately 8 apples of your choice, peeled, cored and sliced
1/2 c packed brown sugar
1/3 c white sugar (or a substitute)
3 tbsp flour (I use wheat, but you can use all-purpose as well)
2 tsp cinnamon
1/2 tsp ginger (optional)
1 tsp nutmeg (optional)
splash of lemon juice
Pie Dough
2 c flour (same as above)
1 c coconut oil (you can use shortening)
dash salt
soy milk (milk of your choice) or water
Directions:
Peel, core, and slice your apples. Slice up and place in a bowl. When finished add dry ingredients to apples toss about. Add lemon juice and toss about more until all apples are well coated. Set to the side.
Prepare pie dough, add flour into bowl. Cut coconut oil into flour mixture until well blended. Add dash of salt and mix. Add enough milk or water until dough becomes flaky and sticks together.
Roll out into 2 circles on a floured surface. Place 1 pie shell in pie plate. Stir apples to be sure all are evenly coated. Add to pie plate. Cover with 2nd pie shell.
For a glowing pie, mix 1 egg yolk and 1 tbsp water together and brush top of pie. Cut air slits in the top and bake in a 425 degree oven for about 40 minutes or until pie looks golden and done.
