The Jar is full again....

Chocolate Chip ~ Blueberry Oatmeal Cookies
Ingredients:

1 c ~ coconut oil (replacing 1 c of butter)
3/4 c ~ granulated sugar
3/4 c~ brown sugar, packed
2 eggs
1 1/2 tsp ~ vanilla
2 c ~ all-purpose flour
1 tsp ~ baking soda
1 tsp ~ salt
1 Tbs ~ ground flax seeds
2 c ~ oats
1 c ~ blueberries, dry
1 c ~ chocolate chips

Directions:

Cream the coconut oil, sugars, eggs and vanilla.  Stir in flour, soda, salt and oats, mix well.  Stir in blueberries and cholate chips.  Drop by tablespoon on to a lightly greased baking sheet.  Bake above oven center at 375 degrees for 10 to 12 minutes or until lightly browned. Remove to wire racks and cool. Makes about 36 cookies.

Soft Sugar Cookies

Soft Sugar Cookies

This is a great cookie to frost and decorate for any holiday year round or to add decorative sugar to for a great soft Christmas cookie.
I bake atleast 5 batches of these cookies in a Christmas season.

Ingredients:

1 c sugar
1/2 c melted shortening
1/2 c sour milk ( add 1 tsp vinegar to the 1/2 c milk) let this set while you continue on with the ingredients
1 tsp baking soda (added to sour milk above)
1 tsp salt
1 tsp vanilla
1 egg
approximately 3 c flour

Directions:

Preheat oven to 400 degrees and bake for 7-10 minutes.
Combine sugar, shortening and egg. Mix sour milk and baking soda if you haven't already done so above. Add to sugar mixture. Stir in salt, vanilla and enough flour to form a stiff dough. Roll on flour surface. Cut with cutters and decorate.

This is a great activity/recipe to use with kids of all ages. I used this recipe for the cookies we made for the fall cookies you will see under our field trip activity for Halloween.
